Macros: 43 Grams of Protein, 14 Grams of Fat, 90 Grams of Carbohydrates
Ingredients ~ 1 cup of Quinoa, uncooked ~ 1 bunch of Kale (or lettuce) Chopped (approx 4 cups) ~ 1 cup of corn (frozen)
~ 1 cup of black beans (canned)
~ 20 grape tomatoes, halved
~ 1 cup shredded cheese
~ 300g cooked chicken
~ 1/2 bunch of cilantro DRESSING
~ 1/2 cup of Barbecue Sauce
~ 1 Tablespoon Sriracha
Directions: Cook Quinoa according to package directions and let cool then divide it amongst 4 mason jars. This will be the bottom layer of your salad. Layer remaining ingredients. First, the dressing and then lettuce/kale, then 1/4 cup corn, 1/4 cup black beans, tomatoes, 1/4 cup cheese and 75 g of chicken in each jar. Garnish with Cilantro and lime. Makes 4 Mason Jars.
